Tartrazine is a synthetic compound used as a yellow food dye.
In a 2016 evaluation of food additives, World Health Organization stated that the upper level of acceptable daily intake (ADI), i.e. intake level that does not pose a significant health risk, is 10 mg per kg of body weight per day. At these levels there seem to be no adverse health effects on humans. However, it's important to not that there might be some cases of intolerance reactions even within this limit. 1
The amount of tartrazine allowed in European Union is in the range of 50 to 500 mg per kg of food. EU allows tartrazine to be used in products such as beverages, flavoured processed cheese, smoked fish, meat and fish analogues, confectionery, mustard, surimi and others. Products that have the highest reported use levels (500 mg per kg of food) are surimi and salmon substitutes. 1
